Surrounded by rolling countryside, Whitley Hall is a solid stone mansion dating from the 16th century, set in 20 acres of immaculate grounds. The restaurant may have a whiff of formality, but the kitchen keeps ahead of the game with a thoroughly modern menu. A slice of chicken and pistachio terrine with roasted shallot mousse and apple swipe is a confident opener before a bravura main course of seared salmon and mussels with chorizo and tagliatelle. Originality doesn't dry up among puddings, either: try lemon chiboust tart with matching ice cream adorned with edible flowers, or poppy seed meringue filled with passionfruit mousse.
