The 1906 restaurant at this luxurious golf-centric hotel, with sweeping views across greens and fairways to the hump of Ailsa Craig, is named after the year it opened. The setting resembles a giant wedding cake, and the kitchen puts a luxury modern spin on Escoffier's classics. Foie gras gets its own section, starting perhaps with a brûlée with Sauternes-poached fruit, pumpernickel granola and gingerbread, then follow that with something from Escoffier's recipe book - perhaps honey-glazed duck suprême with braised chicory, baby turnips and pan juices. For a spot of table-side theatre, finish with a Grand Marnier-flambéed crêpe Suzette with orange and vanilla ice cream.
