The Holcombe is a textbook country inn with winter fires, local ales and amicable staff. Regional ingredients, including the produce of its own garden, supply the menus of mostly traditional fare. Scallops with cauliflower and spiced aubergine, or salt-and-pepper squid with salad and aïoli, are well-turned-out starters, while the main business might extend to noisette and braised neck of lamb with vegetable tagine and quinoa. Stick with fish for main, and you could be in for herb-crusted cod alongside dauphinoise and sprouting broccoli in a dressing of tomato and basil. Desserts get creative with a raspberry and nougat parfait choc ice to accompany Valrhona brownie and candied hazelnuts.
