Homewood came to prominence during the first wave of the country-hotel movement in the 1980s. The chef takes the modern British bull by the horns for dishes such as glazed pig's cheek with cheddar pommes purée and chard, a finely judged dish that is halfway to a main. When the main course itself arrives, it could be crisp-skinned sea bream, briefly seared and served with baby squid and samphire in lemongrass foam, or maybe rack and braised shank of lamb with minted pea purée and shallots. Abandon all obligation to choose at dessert stage with an assiette comprising blackberry parfait, white chocolate mousse, almond marshmallow and various froths and berries.
