Holbrook is a handsome Georgian manor house on an estate that can trace its history back to the 13th century. There are many different spots for pre-dinner drinks, so don't rush, but take in the consummate professionalism of a place where staff are knowledgeable about the menus and there's a serious wine list to contemplate. Start with a finely-wrought wild mushroom risotto with Jerusalem artichoke velouté and crisps, followed by precise flavours all working together in mains of line-caught wild sea bass with crab tortellini, carrot and tarragon gratin and vermouth and chive broth. At dessert, an ethereal caramel soufflé comes with chocolate sauce and vanilla ice cream.
