Set in 20 acres of parkland, Bailbrook is a handsome Georgian country mansion done out in classy contemporary boutique style. Its Cloisters Restaurant is the fine-dining option, an intimate split-level space where you might start with wood pigeon breast with pickled shiitake mushrooms and smoked bacon lardons, set off with a walnut vinaigrette. Main-course cannon of lamb gets a pine nut and herb crust, and is partnered with a potato pressing, caramelised shallots, carrots and a glossy rosemary jus. Flavours counterpoint well in fish dishes such as halibut fillet with pea and bacon fricassée, Jersey Royals and girolles, and dessert might be a rich chocolate fondant with pistachio ice cream.
