The white and red-brick-faced Edwardian country house is classic in style both outside and in, where panelled walls and squashy sofas in front of log fires make a thoroughly inviting impression. A thoroughgoing excursion into modern British territory is mounted by the kitchen. After a starter perhaps of game ravioli in girolle velouté, crisp-skinned sea bass with clams, earthy mushrooms, fondant potato and asparagus is impressively well-timed, and glazed lemon tart with raspberry sorbet and crunchy meringue garnish ends things on a high. The show-stopping main course on the tasting menu might be roast organic guinea fowl done three ways, including a confit of the leg.
