Dating back to 1485, Draper's Hall may be one of the oldest buildings in Shrewsbury but it's all overlaid with a funky modern edge, with beige tartan wool chairs at white-clothed tables and music playing softly in the background. When it comes to the menu, tried-and-tested combinations benefit from some gently updated touches. Crispy-skinned sea bass is served with saffron potatoes, green beans, and spinach wilted in wine adding a sharp edge to cut through a rich bisque-like bouillabaisse sauce. Bookending this, there's chicken liver parfait with caramelised orange, onion marmalade and sourdough toast to start, and to wrap things up, a well-crafted dessert of lemon tart with basil ice cream.
