Refurbished in spring 2015, the place has retained its structure of stone walls and gnarled beams, a venerable backdrop for contemporary dishes that are designed to tease maximum flavour from exemplary ingredients. A salad of the Nut Tree's own garden roots in balsamic vinaigrette with vegetable crisps is an appealing simple opener. Follow with wild mushroom fricassée with parmesan and rosemary croquette, roast saddle and faggot of lamb in sauce vièrge, with an array of provençale veg, including puréed aubergine, or an Indian-spiced treatment of cod garnished with almonds and raisins. Bringing up the rear could be warm chocolate fondant with orange ice cream, or a plate of artisan cheeses.
