This former coaching inn has its origins in the Middle Ages, although the kitchen clearly has its fingers on the pulse of today's tastes. Plump, lightly caramelised scallops are offset by buttery chorizo salsa and charred leeks, to be followed perhaps by seared loin of Highland venison with figs, celeriac, smoked Jerusalem artichoke and port jus. Fish gets a decent airing among main courses: for instance, accurately timed pan-seared fillet of wild brill accompanied by baby squid, sweetcorn and creamed potato. The kitchen's attention to detail extends to canapés, and puddings can be a visual delight: deeply flavoured dark chocolate tart, say, with cherry salsa and noteworthy pistachio ice cream.
