An old stone manor house, built to last, Simonstone Hall is these days a country-house hotel with a few contemporary surprises in store. The rural aspect may well be timeless, and the decor soothingly traditional, but in its evening-only restaurant the culinary mode is very much of our times. Pig's head terrine comes with fashionable spikes of acidity and sweetness, salt marsh lamb arrives with a bit of dry ice theatre, and there are flavours of miso and lime amid the raspberry and dark chocolate to finish. There's a market tasting menu, too, while the hotel's brasserie (open lunch and dinner) takes a more familiar gastronomic approach.
