The Rosette award for this establishment has been suspended due to a change of chef. Reassessment will take place in due course under the new chef. Dating from 1881, the Judges Country House Hotel occupies a magnificent edifice within 22 acres of well-maintained grounds that include a walled kitchen garden. The dining room is furnished and decorated in keeping with the age and the style of the property, with a patterned dark green carpet, striped wallpaper, double-clothed tables set with silver cutlery and fresh flowers, and large windows as standard in the conservatory area. Service is on the formal side, but staff are friendly and keen to engage with diners. First-class ingredients underpin the kitchen's output, with Loch Duart salmon and Wye Valley rhubarb appearing in an opener with garnishes of Avruga caviar and Granny Smith apple and a scent of lemon verbena, while main courses run to Yorkshire lamb loin and pressed shoulder alongside wild garlic mash and capers, or a marine combination of east coast cod, brown shrimps and cockles with potato and leeks. Classic steak and sauce pairings with triple-cooked chips, the meat salt-aged for at least 35 days, will please traditionalists, and desserts look to savoury seasonings for coconut parfait with wasabi sorbet and coriander, or crème brûlée with textured strawberries and tarragon. The short Market Menu is particularly good value in the opulent circumstances.
