The grand old Edwardian pile by the city’s medieval walls started life as the HQ of the North Eastern Railway and its handsome features and lavish scale were ripe for reinvention as today's luxurious hotel. The place boasts the sort of swish facilities we expect in the 21st century – classy bedrooms, a glossy spa, and an elegant cocktail bar for a sharpener before dining in Hudson's, a brasserie-style venue with a sophisticated sheen and professional service to match. Head chef Craig Atchinson and his team turn out contemporary, well-crafted dishes with a local flavour, delivered via an ever-evolving set menu or five- and nine-course tasters. A five-course workout might open with smoked cod roe with seaweed and sea buckthorn, then progress via Jerusalem artichoke partnered by wild mushrooms, Wensleydale cheese and brassicas to a lively fish idea like stone bass and langoustine with fennel and buckwheat. Meat, too, is handled deftly – glazed beef cheek, say, alongside hen of the woods mushrooms, alliums and truffle. Finish on local ground with Yorkshire blackberries, apple, buttermilk and brown butter.
