Not far from the castle, and with Harrogate barely five miles away, the GT is a country inn with character. When the chef entitles his menus 'Food with Yorkshire Roots' here, he means it. Twice-baked Wensleydale soufflé with tomato relish is a regionally unimpeachable starter option. Suckling pig appears in many guises on one plate - loin, belly, shoulder and black pudding with pear and dauphinoise - while the sole fish possibility on a meaty roll call of mains might be seared sea bass with truffle gnocchi and marinated artichoke. To round things off, treacle tart is served with clotted cream, Horlicks ice cream and peanut butter.
