The Three Salmons is one of those places that runs its own kitchen garden, and the rest of the produce is sourced just as discerningly for brasserie cooking that highlights its quality. An opening dish of ham hock with black pudding, apple and a Scotch quail's egg makes that clear. Mains might follow on with a suitably robust treatment of hake, which comes with confit chicken wing, a giant oyster mushroom and dauphinoise in lemon butter. Calves' liver is tenderly timed, and matched with crisp smoked bacon, spinach and creamy mash, and meals end in populist fashion with chocolate fondant and ginger ice cream, or crème caramel with poached pear.
