Press the buzzer to gain admittance to one of the West End's understated temples of Japanese elegance, a short glide from the hurly-burly of Berkeley Square. Inside, the prospect has what one might conventionally denote a Zen-like balance, with delicate wood screens and subdued lighting acting as a foil to the hyperactivity of the kitchen brigade. Almost alone among the world's classic cuisines, Japanese food has only very peripherally succumbed to the advancing tides of fashion, retaining a firm anchorage in the ancient ways. When that produces stunning fish and seafood dishes, ringing with resonant freshness and pinpoint seasoning, it's hard to argue: the zensai appetisers alone here are exquisite – try the sake-steamed abalone for one. Things might proceed to lightly grilled tuna cuts (back and belly) with a trio of dressings, or the famed Irish wild eel, charcoal-grilled and anointed with sweet soy. The Wagyu beef is inevitably superb, and inevitably comes at a terrific premium, but if funding is not an obstacle, go for the full Kyoto-style kaiseki menu, with its monkfish hotpot, truffled sika deer, and sake-laced kumquat dessert.
