The blond wood sliding door in Mayfair is easily missed if you haven't been before. Press the buzzer to gain admittance. Inside is a sepulchrally lit space adorned with filigree wood and slatted screens. It manages to convey an atmosphere of intense activity, with busy chefs and sashaying wait-staff giving it some, and yet the ambience is all relaxed civility. The Kyoto-style menu structure allows Yoshinori Ishii much creative leeway, and if the budget permits, the tasting menus are the most impressive and elaborate way to go. Seafood is unimpeachable, from Northern Ireland wild eel which may be charcoal-grilled and dressed in sweet soy, to lightly seared Cornish lobster in a sauce of its coral. Presentations are the last word in labour-intensive elegance, sparse but lovely, pairing a single Icelandic sea-urchin with warm tofu, or offering boomingly rich, gamey woodcock in a sauce of its liver. The savoury dishes end with a bowl of rice, perhaps topped with grey mullet bottarga, and the imaginative desserts close out the deal with the likes of blood-orange and black rice, served with tofu and white miso ice cream, or warm Manjari chocolate sponge with an ice cream flavoured with genmaicha (green tea mixed with roasted brown rice).
