To experience New Zealander Peter Gordon's cooking - some of the most exciting and innovative fusion food in the capital - head upstairs to Providores. How about a lively starter of seared yellowfin tuna with papaya, carrots, cucumber salad, lime chilli dressing, toasted nori sauce, peanuts and sesame? Main courses seem a tad calmer in comparison. Beef pesto is a signature dish - tender fillet with pesto and a salad of chard, courgettes and beetroot with olives - and there might be crispy pork belly with dashi-braised sprouts, Puy lentils, apple and peanut butter flavoured with lemongrass. End with what the menu calls 'pumpkin pie - sort of', if you dare.
