The glass lift whizzes up to the 38th floor of Heron Tower in a few queasy seconds, but Sushisamba offers nothing but pleasure to the digestion. Japan, Brazil and Peru provide inspiration for a fusion of straight-up sushi and all-day grazing plates of high-quality ingredients – not least the Kobe beef, which comes cooked on a hot stone (ishiyaki) or sizzled on the robata grill. Flavours are spot on in salt and pepper squid sexed up with dry miso, shichimi, sea salt, crispy garlic and smoked soy, and robata-grilled lamb chop with red miso and lime is equally on the money. For dessert, a deconstructed alfajores biscuit comes with dulce de leche ice cream.
