St John has become something of a pilgrimage spot for anyone claiming foodie credentials. Set up in 1994 in a former Georgian smokehouse by Smithfield Market, the 'nose-to-tail' eating philosophy championing unglamorous, lesser-used cuts has turned on a generation of chefs to the robust, gutsy style. The long-running roast bone marrow with parsley salad is a surefire starter, followed by a rustic plate of braised rabbit with Savoy cabbage and green herb sauce. It's not all about the meat though - how about skate with monk's beard and capers? Desserts are equally comfort-spun, from the signature Eccles cake and Lancashire cheese, to buttermilk pudding with poached rhubarb.
