The world-conquering Mr Atherton’s tapas joint displays a clear stylistic homage to old-school bodegas, albeit with a hip industrial edge, and the repertoire is similarly modern yet rooted in tradition. Open kitchens on ground-floor and basement levels send out old friends - witness perfectly crispy ham croquettes - and a more intricately worked plate of roast suckling pig with morcilla croquettes and apple and cider caramel sauce; global flavours play their part too - perhaps Szechuan-fried chipirones (baby squid) with Japanese togarashi spices, ink aïoli and lime. Note that wine comes first in the title, and this is justified by a cracking listing of mind-boggling breadth and artisan discoveries.<
