In a regal Georgian building that’s home to the Royal Institution of Chartered Surveyors, this outpost of the Roux empire restaurant offers refined cooking in elegant surroundings. Its duo of dining rooms sport a fetching mix of modernity and clubby restraint, run by impeccably correct and professional staff, and if you’re not one to miss out on a cocktail opportunity, start things opulent grand hotel style at the Pembury Bar. The kitchen here is headed up by Steve Groves, a prodigious talent in his own right, whose interpretation of the Roux house style delivers light, modern, smartly-engineered dishes that merge British, French and broader European ideas with a dash of innovation here and there, as in a starter of Dorset crab with apple, fermented chilli and dashi. Mains course stars superb Berkshire pork supported by turnip, barley and tarragon, or perhaps sea trout pointed up with cucumber, caviar and dill. It all looks pretty as a picture on the plate too, right through to a stylish dessert of Manjari chocolate délice with hazelnut and crème fraiche ice cream.
