Set in the swish St James' Court hotel, Quilon offers a designer-led, ultra-modern interior, and cooking that showcases the cuisine of India's southwest, mixing traditional and more inventive ideas, with tip-top materials the backbone of the kitchen's output. Crab cakes are packed with juicy chunks of sweet claw meat, shredded curry leaves, ginger and green chillies, while main-course seafood moilee is an upmarket take on a classic south Indian fish stew, made with halibut and prawns in a creamy broth of coconut milk, turmeric, ginger and garlic. The kitchen pays the same care and attention to rice and breads, and the show closes with baked yoghurt flavoured with confit orange, mango and lychee.
