Creating a dedicated seafood restaurant, the kind that ought by rights to be sitting on some sun-kissed section of the Côte d'Azur, in landlocked Knightsbridge was a challenge to which Pascal Proyart has risen with triumphant aplomb. Not only is he a brand ambassador for the Seafood Council of Norway, he brings something of his Breton boyhood to proceedings here, against a backdrop of marine blue and driftwood brown, with gentle lighting and discreet music to add a sense of calm. When Proyart reaches out of his home territory, the results are still stunning, as when yellowfin tuna tartare is matched with soft-shell crab tempura, sushi rice and tobiko, with aromatic notes of lemon, ginger and wasabi (the last a sorbet) lifting a stimulating starter. Main could be translucent cod with Sicilian red prawns and a 'cassoulet' of Paimpol red beans in a rich bisque sauce, or perhaps sea bass in sauce barigoule with olives, artichokes, capers and basil. There are a couple of meat dishes, while surf-and-turfers can feast on beef fillet and lobster together if they've a mind, and it all concludes with inventive desserts like white chocolate and juniper berry sablé with lemon sorbet, gin and tonic jelly and mint syrup.
