The human dynamo that is Giorgio Locatelli will be familiar to readers from his many TV appearances and cookbooks, but it's here, in an elegant, spacious Marylebone venue, all light wood and cream upholstery, that the intensity of his commitment really makes palpable sense. Locatelli has been at the forefront of the movement to nudge traditional Italian cooking into the 21st century, with a light-touch innovative spark that nonetheless does justice to the regional traditions. So you might start a meal with something as simple as burrata, accompanied by caponata and dressed in aged balsamic vinegar, and yet feel that you are experiencing these familiar tastes for the first time, or you might go straight to the primi, where risottos of snails and nettles, or hand-made pasta such as tagliatelle with kid meat and chilli, await. Main courses respect the elemental simplicity that is the foundation stone of Italian cooking, adding lentils and garlic purée to superbly rich roast squab, or presenting roast brill in a straightforward acqua pazza of wild chicory, green olives and tomato. Tart of the day or tiramisù are the obvious ways to finish, unless you get lured in the direction of vanilla cheesecake with violet jelly and strawberry sorbet.
