The name is Latin for 'wild', a clue to the back-to-nature orientation that has been brought, however improbably, to a grand old West End hotel, Claridges. A bare, white-limbed tree takes centre stage, with discreet sprays of foliage here and there, amid the art deco lamps and sober grey livery of the dining room. Matt Starling is able to draw on impeccable produce here to create technically dazzling dishes in shorter and longer tasting sequences, as well as a comprehensive carte. Crisply roasted veal sweetbreads come with caramelised violet artichokes and monk's beard in mussel cream for a bravura opener, and then poached turbot might appear in the delicate company of sprouting broccoli and sunflower seeds, or superlative fennel-seeded Cornish hogget saddle with hispi cabbage in a strong dill cream sauce. Vegetable-based desserts tease the unexpected sweetness out of such ingredients as Jerusalem artichoke, in an ice cream that accompanies toffee apple and salt caramel. The final witty note comes with a petit four styled on a certain brand of ambassadorial foil-wrapped chocolate, transformed into a hazelnut encased in sweet mushroom purée.
