When Pascal Aussignac opened Club Gascon two decades ago, his aim was to bring the cooking of his ancestral south-west France to a London that was familiar enough with foie gras and cassoulet, but in ways that creatively reimagined the possibilities of a region of gastronomic riches. He helped pioneer the small-plate approach that encourages experimentation, and constructed menus that successfully balance traditional combinations with thoroughgoing modernity. The formula remains a winner. Duck naturally features prominently, as in the immaculate duck confit with berries, and the opening taste of 'Ultimate Duck' with Aquitaine caviar, while fish options take in turbot with popcorn in Guinness and oyster sauce. Vegetarian offerings are as dynamic as the rest, as in smoked chestnut cappuccino or black-truffled potato spaghetti, and dessert might be pineapple soufflé with ginger and lemongrass sorbet.
