Pascal Aussignac's avante-garde take on the cooking of southwest France remains as vibrant and exciting as it did when Club Gascon first opened 20 years ago. Right by Smithfield Market, the setting is a grand, high-ceilinged space of marble walls, oak floors and exuberant sheaves of flowers. Aussignac may take his spiritual inspiration from his homeland's Gascony region, but this is highly-evolved, technical cooking that is a long way from the goose-fat-and-garlic peasant cuisine of its roots. A cylinder of pressed foie gras is sheathed in crab jelly and pointed up with tangy piperade sauce and a crab-flavoured canelé pastry, while fish options take in immaculate barbecued monkfish on a ‘camouflage’ of powdered truffle, parsley and beetroot, alongside pork and fish stock consommé and pork crackling for texture. Reverting to more traditional mode, dessert delivers an exemplary peach soufflé dusted aromatically with Earl Grey powder and matched with lime and mint sorbet.
