Discreetly tucked away in exclusive Belgravia, hot-ticket Amaya is part of the avant-garde Indian restaurant movement that has brought glitz, pizzazz and sophistication to the cooking of the subcontinent. From sleek cocktail bar to seductive dining room, there’s an in-place vibe and high-glam good looks; think glittering lighting, black granite, leather seating, and vivid artworks and terracotta statues to catch the eye. But, it’s the big drawcard theatre kitchen that delivers the real wow, the cooking built around traditional grilling - in the tandoor, on the flat griddle and over the oven flame. The fashionable grazing menu features small-plate sharing dishes; perhaps adraki chicken tikka (juicy boneless chicken with warming spices and ginger) or knockout spinach tikki with spiced fig to chargrilled flaky fresh sea bass fillet (with coconut, curry leaf and chilli), while luxury might also see foie gras get the tandoori treatment. The more traditional finish is provided by a handful of grandstand curries (spicy Kerala prawn) and biryani (green herb chicken made with mature basmati rice), while spot-on service and a classy wine list (plus inventive cocktails) also hit the high-gloss stakes.
