Pietro Catalano, who hails from Sicily, has created a restaurant with rooms in a former windmill that combines the best of Italian hospitality with a touch of boutique swagger. A first course dish of ballotine of rabbit and foie gras shows ambition, with its accompanying trio of pear (jelly, poached and velouté), plus some smoked loin and a pistachio biscuit. A fashionable partnership of turbot and crispy pork belly is up next, with tempura prawns and romanesco purée, or go for loin, daube and boudin of venison with sour cherry jus. For dessert, 'toast and marmalade' sponge is served with brown bread ice cream and orange crème anglaise.
