Dating from the reign of Henry VIII, the Three Swans is a high-street hotel that has played host to various crowned heads over the generations. A makeover has produced a clean modern look that respects the original features, and smartly attired, tuned-in staff run the dining room with inspiring confidence. Crab fritters served with properly loose-textured pea pannacotta and lemon mayonnaise are a satisfying prelude to something like short rib of beef slow-cooked in Black Sheep ale with tenderstem broccoli in a beery gravy, or sea bass with chimney-smoked bacon and salsify. Chocoholics are indulged with an array of chocolate-caramel mousse, white chocolate cream, a cocoa-nib tuile and honeycomb.
