Having trained at The Savoy, this restaurant's owners know a thing or two about hospitality in the grand manner, but the mood here is decidedly more cutting edge. Begin with vigorously spiced curry-roast scallops with cumined cauliflower purée and Indian accoutrements, including a pakora, mango chutney and a scattering of poppadoms. That could be followed by pork fillet roasted in smoked paprika and garlic with chorizo and aïoli, or Moroccan-accented salmon chermoula wrapped in brik pastry on apricot and pistachio tabouleh. This is Stilton country, so Cropwell Bishop with quince paste might look as appealing as honey and rosemary rice pudding served with chunks of pear poached in red wine.
