As its name makes clear, there are some pretty swanky spa facilities at this classy adult-only retreat in 100 acres of Lancashire countryside. The Brasserie and its recently completed Orangery extension are another string to its bow, done out with orange and lime leather seats at unclothed tables. Start with barbecued salmon, served up with pickled white asparagus, samphire, caviar, and potato mousse. An impressive main course stars suckling pig in the form of roast loin and a croquette of braised shoulder with black pudding, salt-baked celeriac, apple textures and caramelised sprouts. For dessert, there's a faultless tarte Tatin of red wine-poached pears with vanilla ice cream.
