The Bedford is a welcoming, family-run Victorian hotel with lots going on. Its Cartland Restaurant has plenty of period charm, with decorative plasterwork, warm pastel tones, black-and-white prints of film stars and neatly laid tables. The cooking steers sensibly clear of left-field flavours. Venerable Lancashire cheesemaker Sandham's provides the wherewithal for an air-light soufflé, with caramelised red onion marmalade and a balsamic reduction providing the sweet-and-sour counterpoints. Next up, sea bass fillet is seared to perfection and matched with vine tomato and basil fondue, saffron potatoes and crisp leeks. The good ideas and careful execution continue at dessert stage with orange cheesecake topped with candied ginger.
