Lakes Restaurant at this country-house hotel and spa gets its name from the family who built the original property in the mid-19th century. Elaborate swagged drapes hang at the large windows looking out to the grounds, chandeliers add a bit of glitter, and upholstered dining chairs are pulled up to formally set tables. The kitchen takes its cue from the contemporary British repertoire. Panko-coated venison and black pudding Scotch eggs is one way to start, followed by pan-fried fillet of cod with a bean and potato cassoulet, or roast guinea fowl breast served with a boudin and pickled beetroots.
