The refurbished interior makes an eye-catching statement at The Nightingale, where contemporary boutique chic mingles with Victorian style for a hotel with personality. A chandelier-lit dining room with white linen is the sophisticated setting for cooking founded on exciting combinations and bold flavours. Start with a swordfish ceviche, or punchy, crunchy tequila-infused cactus tostada with guacamole, pickled kohlrabi, salsa ranchero and beetroot and you'll feel a long way from the Isle of Wight. Mains might be citrus and sage brined pork tenderloin, bourbon-smoked purple potato, baby leek, aubergine and roasted pear cream; or for vegetarians, wild rice in cardamom pesto and halloumi marinara.
