This must be one of the remotest restaurants in Scotland, reached via a single track road. The kitchen cooks whatever its suppliers have provided on the day, with blackboards revealing all. This local bounty is turned into dishes that maintain integrity through simplicity, so flavours are to the fore. Start with stunning-looking delicately smoked ham hough terrine wrapped in Parma ham with dill dressing and piccalilli, and move on to exemplary best end of lamb with haggis, sherry sauce and an array of vegetables. Top them with delicate vanilla and lavender pannacotta topped with strawberry sorbet surrounded by intense strawberry soup.
