You do have to be pretty determined to track down The Torridon, but who wouldn't be? The reward for the hunt is a turreted Victorian lochside lodge that still offers plenty of sporting activity, a copiously stocked whisky bar, and a panelled and leathered ambience for sinking into while you forget the rigorous journey. Ross Stovold has the produce of a two-acre kitchen garden at his disposal in the 1887 Restaurant, where he offers contemporary Scottish cuisine in dishes that are presented with artful simplicity. Textures and flavours come into exquisite harmony in a starter of seared sea bass with smoked butternut squash, garnished with herring roe, chicken skin and samphire. At main, pedigree meats such as Beinn Eighe venison with textures of parsnip, sprouts and fermented rosehip make strong statements, while fish might be Mallaig halibut with Skye mussels, pink firs and seaweed. To finish, the several richnesses of double cream custard with heather honey and meringue are offset with nippy little pickled raspberries, or go for brown butter cake with oats and nutmegged plum.

Getting here

From Inverness take A9 north, follow signs to Ullapool (A835). At Garve take A832 to Kinlochewe, take A896 to Torridon. Do not turn off to Torridon Village. Hotel on right after Annat.
