This very grand baronial castle is set in a wonderfully verdant valley at the foot of Ben Nevis. Views are spectacular, and there’s a real sense of history and opulence in the richly decorated public spaces, with all the high ceilings, antiques and crystal chandeliers you could wish for. The restaurant is more intimate and extremely formal in approach – white gloves are worn by smartly attired staff and gentlemen guests will need their jackets. Don’t be intimidated, though – the team are wonderfully hospitable. The style is modern British with French influences as one might expect from the consultant chefs, father and son Albert and Michel Roux Jr. Dishes are complex, with many elements, you’ll experience wonderful textural contrasts and clean, clear flavours. Tartare of Highland beef with chestnut mushrooms is a robust beginning, served with super crisp croûtons, sliced chestnut and pickled shiitake and a wonderful truffle mayonnaise. Sea bass comes with courgette tagliatelle and shrimp consommé, poured at the table. A precisely plated ginger cake with white chocolate and orange sorbet brings things to a refined conclusion.
