Dulse & Brose takes its name from a type of seaweed and an oatmeal dish, symbolising the use of Scottish ingredients at this trendy boutique hotel and restaurant. There is a casual atmosphere here, with views of the Skye scenery, wooden tables and banquette seating, plus clever cookery is the order of the day. You might start with beetroot salad with butternut squash and goats’ cheese mousse, or Cullen skink, then follow with cod fillet cauliflower cheese risotto with bacon crumb and julienne vegetables perhaps. Top it all off with treacle tart, marmalade ice cream and candied walnuts, and maybe accompany that with a glass of Vidal Icewine from Ontario, Canada.
