The house began life as a pair of elegant villas during the Regency of George IV and is now owned by a local farmer whose produce features on the modern British menus. Start perhaps with grilled mackerel with horseradish gnocchi, beetroot and white chocolate adding a sweet element, followed perhaps by duck breast with sweet potato, green beans, pickled fennel and raspberry vinaigrette. Reversing the fish and meat order might produce braised neck of lamb and courgette lasagne sauced with salsa verde, then roast sea bass fillet with spiced lentils, vanilla-roasted butternut squash, langoustine and pear purée. Finish with white chocolate and dill parfait with pickled cucumber.
