At the back of the fishmongers is the intimate, elegant dining room, reached by passing the kitchen, from which chef himself often emerges to bring your dish to table. A chunk of monkfish given the Madras treatment arrives with spiced carrot purée, plump raisins and sous-vide potato. Other possibilities are founded on East Asian seasonings, or go for slow-cooked pork cheek with burnt apple. Scallops with their corals to start come in a laverbread, oat and pancetta porridge, dressed in 50-year-old balsamic, while dessert might be a blueberry study incorporating pannacotta, sorbet, tuile, foam and fresh berries. Throw in creative canapés to complete a terrific meal.
