Within the SenSpa at Careys Manor Hotel in the New Forest is a smart Thai eatery with its gold columns, bamboo ceiling and darkwood tables and chairs. Classic tom yam soup kick-starts the palate with its sour, fiery and fragrant cocktail of tiger prawns, mushrooms, chilli, lemongrass, galangal and kaffir lime leaves, or you might get going with crispy fried soft-shelled crab with garlic and pink peppercorn sauce. Main-course wok-seared beef comes with red curry paste, beans, red cabbage, tumicuni ginger and chilli, and proceedings end with a sharp, cleansing dessert of pineapple carpaccio with agave syrup, fresh basil and coconut ice cream.
