The present house sprang up in the late Victorian era. A Tudor-Gothic hybrid architecturally, the interiors are awash with finely crafted mouldings, copperwork, and beautiful examples of the lavatorialist's art, plus Grinling Gibbons carvings, ceilings by Fragonard, and a room modelled on the Alhambra. James Whitesmith supplies the culinary opulence to go with it. Seared scallops with chorizo and pea textures might set the pace, and be followed by sea bass with blowtorched chard and capers in clam dressing, or Parma-wrapped pork fillet with onion rösti in cider-laced mustard jus. Desserts might include buttermilk pannacotta with kiwi, mango and popping candy.
