In an Area of Outstanding Natural Beauty, Esseborne is a dignified Victorian country house where chef Dennis Janssen creates modern dishes that sparkle. It's not all whizz-bang, though, and there is evident classical thinking going on. Pigeon features in a first course with black pudding and cauliflower, with the zippy flavours of cumin and capers, or go for a combination of ham hock terrine with piccalilli and gingerbread. Main-course cod with ox cheek and salsify delivers satisfying flavours, or go for a classic wild mushroom risotto. There's a tasting menu, too, plus contemporary desserts such as an apple and toffee pressing with walnut cake and goats' cheese ice cream.
