The fantasy Italianate village on the north Wales coast, created by Sir Clough Williams-Ellis, was conceived around the ruin of what is now the hotel. When the whole place began to materialise in 1926, the hotel became its focal point, its gracefully curving dining room being added in 1931. Fresh, lively, modern Welsh cooking enhances the whole experience no end, in the form of starters such as tomato tarte fine with goats'-milk ricotta and iced avocado, while the main course delivers a turbot and chicken wing duo with pea purée in smoked chicken jus. Finish with a regal blueberry soufflé alongside chocolate and lavender ice cream.
