The sister restaurant to the high-flying Adam Reid at The French is named after a coach-making family whose Victorian home this was. There is a 35-foot-high tree in the middle of the dining room – of course. This is the more casual dining option in the hotel but the culinary output is a cut above the norm. A first course full of flavour brings together a set cheese custard with sour onions, caramelised onions and onion crumb, before Cumbrian beef sirloin is served with smoked beetroot puree, parsley root, parsnips and marrow fat jus. Leave room for pistachio and olive oil cake, sour plum sorbet and oat cake tuille.
