Occupying a 400-year-old timbered building in Betjeman's suburban Metro-Land, the decor is intimate and rather romantic, with a low-beamed ceiling and contemporary black leather seats at white linen tables. After more than two decades in business, local supply lines are strong, while top-grade meat and fish comes from Smithfield and Billingsgate markets. Open the show with wood pigeon accompanied by cauliflower purée, pancetta lardons and balsamic, moving on to Shetland sea trout helped by the kick of lemongrass and ginger with fondant potato and samphire. At the end, the tang of orange sauce transforms bread-and-butter pudding.
