Lurking in Shurdington, on the verdant outskirts of leafy Cheltenham, the Greenway is an Elizabethan manor house of Cotswold stone, its façade half-hidden in clambering ivy. Up-to-the-minute spa facilities are always a draw, while the Garden Restaurant is named after its soothing view, with a majestic stone fireplace and venerable oak panelling adding lustre. Marcus McGuinness is a model modern-day practitioner, overseeing a thriving kitchen garden, engaging in forays into the countryside to gather wild provender, and sourcing thoroughbred prime materials, before turning it all into elegant, eye-catching dishes of striking character. Start with a Chinese-influenced broth of char siu pork and langoustine with langoustine tartare and pickled cucumber, before turning to Hereford beef fillet and oxtail croustillant with classical Rossini garniture, or maybe poached and roast brill with spiced bread, walnuts and pear. Meticulously selected cheeses are a worthwhile extra to a dessert such as bergamot lemon curd with pine nut brittle and clove ice cream, or rhubarb savarin with matching sorbet.
