Calcot Manor is a boutique-style hotel of Cotswold stone with a health spa and a light-filled restaurant called The Conservatory. The kitchen works around a repertoire of imaginative modern dishes, and flavours have real punch. Starter options might be seared scallops with confit pork belly and cauliflower and truffle purée, or gazpacho with a ricotta-stuffed courgette flower, a seared langoustine and a quail's egg. Main courses range from honey-roast duck breast with dauphinoise, carrot purée and chicory to herb-crusted rack of lamb with boulangère potatoes, garlicky creamed green beans and an intense gravy. End with impeccable praline soufflé with banana ice cream and hot toffee sauce.
