This perennial favourite enjoys a well-deserved reputation as the go-to place for top-notch fish and seafood. The kitchen is passionate about sourcing the best seasonal produce, with fish from sustainable stocks cooked with simplicity and style. The menu might get under way with one of its original ideas - perhaps a glass of tartare of sea bass mixed with pieces of goats' cheese, chives, sesame seeds and tomato and basil sorbet - and go on to halibut fillet on crabmeat with smoked haddock, asparagus, coral cream and tarragon. No less impressive are desserts: perhaps carrot pudding with citrus cream cheese and marmalade ice cream.
