The Charalambous brothers' smart eatery in Glasgow's West End may be a city venue to its fingertips, but it looks to the Scottish natural larder for its culinary inspiration. A positive, laid-back tone pervades the place, with wine-red banquette seating at unclothed tables beneath copper-shaded lamps, and the menus deal in the kind of food that informed modern diners like to see. A double-act of scallop and squid garnished with smoked roe and celeriac purée offers a mixture of sea-fresh and earthy flavours, or there could be a more obviously French-inflected opener of sautéed veal sweetbreads with morels, wild garlic and foie gras. Fish main dishes are full of pronounced intensity, perhaps teaming skate wing and smoked haddock with wild leeks and peppered dulse, while pedigree meats might include fine Scots venison with black pudding and mixed grains, or look south of the border for Goosnargh duck with puréed squash in clementine-tinged jus. Finish with the house take on Highland crowdie, turned out with rhubarb, sorrel and yogurt, or go for a cheese selection from Glasgow specialist George Mewes. The flexibility of approach brings in a shorter Market Menu, as well as the tasting format of six or eight courses, which comes in pescatarian and veggie versions too.
